easy tuna patties

Being so cheap and fast to make, this tuna patty recipe has become one of our regulars. It only uses five simple ingredients and is such a good way to stretch out your groceries. Using this recipe, two cans of tuna makes 10 patties!

These patties are low fat and high in protein. Using ground-up oats instead of breadcrumbs to bind the patties is also much healthier and higher in fibre. On the side, we like having these with oven baked cauliflower, as they give you an easy serving of vegetables and (don’t think we’re crazy) taste like chicken nuggets!

You can serve the patties as a burger, or if you’re watching carbs, on top of a salad or between two lettuce leaves.

Ingredients:
• 2 small cans of tuna
• 1 cup tomato sauce
• 1/2 cup diced onion
• 1 1/2 cup oats – ground into a powder
• 2 egg whites
• Pepper to taste

Instructions:
1. Preheat your oven to 450 degrees. Lightly grease a baking sheet with olive oil or Pam.
2. Drain and flake the tuna.
3. Ground up the oats into a powder using a blender or food processor. We use a Magic Bullet and it works really well.
4. Combine all the ingredients in a large bowl and mix well.
5. Shape the tuna mix into balls 2.5 inches in diameter. On the baking pan, press them into patties.
6. Bake for 15-20 minutes, depending on how moist you want the patties.

Nutritional information: Each patty 95 calories; 1g fat, 13.3g carbs, 10g protein

Baked cauliflower:
Bake yellow or regular cauliflower in the oven at 400 degrees for 45 minutes. Eat warm and serve with your favourite barbecue sauce!
